Known for its extreme tenderness, this steak is cut from the shortloin primal. Tenderloin steaks are best cooked hot and fast. Marinades are not required as long as they are not over cooked. You can add a little flavour in the form of a rub or spice. Filet mignon is cut from the butt end (large) of the tenderloin. Chateaubriand comes from the center portion of the tenderloin and is the most tender. Tournedos are cut from the tail portion and usually wrapped in bacon.
