Technically the flank Steak is not a steak but it is popular and used in such a fashion as a steak would be. The Flank is the belly muscle of the beef.  The flank is flavorful and contains almost no fat.  This steak usually remains tough no matter how you cook it unless you help it along.  It is recommended to score the meat diagonally on both sides or ask the butcher to delicate it.  This is to break up the coarse grainy structure of the meat.  The popular uses for this item is London broil but more recently for fajitas.
